Peanut Butter Oatmeal Cookies

I have this adorable little one year old, who is about as small as a peanut.  Ok, that might be an exaggeration, but his weight barely hits the charts.  The pediatricians told me to “fatten” him up and come back in six weeks.  Easy task, right?…not so much.  Remember a previous post where I mentioned he eats boxed macaroni and cheese and pouch applesauce almost exclusively?   (With the exception of sweets.)  Therefore, the other day I tried to get creative with a sweet that would provide some protein and fiber, but also be tasty enough for his picky palate.  Ta dah, insert Peanut Butter Oatmeal Cookies.  The little guy will eat cookies and peanut butter, add them together with some oatmeal (for added soluble fiber), we have a winner!

Peanut Butter Oatmeal Cookies

Peanut butter cookie with an added health twist...Oatmeal!
Ingredients
  • 1 cup peanut butter
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • ¾ cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1½ cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup quick cooking oats
Instructions
  1. Preheat oven to 350 degrees
  2. In a large bowl (or mixer) mix peanut butter, sugars and butter until smooth
  3. Add vanilla and then beat in the eggs one at a time until blended
  4. In separate bowl combine flour, baking soda and salt and add to peanut butter mixture
  5. Stir in oats until just combined
  6. Drop by teaspoons onto ungreased cookie sheet.
  7. Bake 12-15 minutes or until lightly brown around edges
Notes
Once baked and cooled can be stored in an air-tight freezer container. (I actually prefer them out of the freezer...yum!)

  1. Thank you so much for this recipie! I took these to work because I was going to eat them all and everyone was RAVING about them. I was told I had to bring another batch on Friday. Love these. Next time I might add a little cinnamon or honey to see if it makes them even better!

  2. I just found this recipe on Pinterest. It’s absolutely delicious! I did sub oat flour for the regular flour then chilled them before baking, it gave them a great extra nutty flavor.
