Today I’m sharing a family favorite dessert, peanut butter pie bites. These are heavenly! You honestly would never know that they are sugar-free and low-carb.
For Christmas last year, my husband gave me a cookbook called Southern Keto by Natasha Newton, and I have loved it so much. There are a lot of stained pages, which to me is the test of a good cookbook.
The page for this recipe, peanut butter pie bites, is particularly stained because we make them so often. They are super easy so make, are sugar-free and low-carb, and taste like a peanut butter pie.
Keeping a sugar-free sweet treat in the freezer for a quick after-dinner dessert really makes me happy, and I hope it will be fun for you, too.
Peanut Butter Pie Bites (Keto, Sugar-free)
Ingredients
- 1 8 oz package cream cheese softened (I use neufchatel cheese)
- 1/2 C natural peanut butter no-sugar added
- 1/2 C confectioners' style erythritol I use Swerve or Trim Healthy Mama Gentle Sweet
- 2 oz dark chocolate chopped (unsweetened)
Instructions
- Line a sheet pan with parchment paper.
- In a mixing bowl, cream together the cream cheese, peanut butter, and erythritol using a hand mixer.
- In a small bowl, microwave the chocolate in 30-second increments, stirring after each increment, until the chocolate is melted and smooth.
- Drop tablespoons of the peanut butter mixture onto the prepared pan. I like to use a melon baller or cookie scoop for this.
- Use a fork to drizzle the melted chocolate over each bite.
- Freeze for at least an hour before serving. Take bites out of the freezer for a few minutes before eating.
