As much as I love all of the dishes that go along with Thanksgiving – the mashed potatoes, the gravy, the green bean casserole, the sweet potato pie, the marshmallow fruit salad…I eagerly look forward to a fresh salad to follow. Comfort food hits the spot, undoubtedly; however, the fresh fruits and vegetables can really strike a chord with me as well. Hopefully they balance each other out, right?
If you like a fresh salad like me, I think you will very much enjoy this one. It’s simple and delicious. It can also be an anytime salad or perfect on a holiday menu. The pears and pomegranates remind me of Christmas so we may be having it then, too.
P.S. If you are using a whole pomegranate, be very careful when taking it apart. It is loaded with juice. Make sure you’re wearing an apron, and hopefully not your favorite sweater while you do this.
Other fresh lettuce salads:
Sugared Almond & Strawberry Salad
- 3 c. fresh spinach
- 1 pear chopped
- ¼ c. pomegranate arils
- ¼ c. feta cheese
- ¼ c. pecan halves
- For the dressing:
- ⅓ c. fresh orange juice
- ¼ c. olive oil
- 1 T. Dijon mustard
- 1 T. apple cider vinegar
- ¼ t. salt
- 2 t. poppyseed
- 1 T. honey
- For the salad, add the spinach to a large bowl and layer the remaining ingredients on top.
- For the vinaigrette, add all the ingredients to medium size jar with lid. Tighten the lid and shake until thoroughly mixed.
- Drizzle over salad. Toss to combine. Serve immediately and enjoy.
