These oatmeal butterscotch cookies are one of my favorite cookie recipes to make in fall and winter months. They are crispy on the outside, warm and gooey on the inside. The teaspoon of cinnamon gives the regular oatmeal cookie some added depth and the butterscotch chips give them an added perfect flavor.
In the cooler months it has become a tradition for us to gather around the table with warm cookies and a glass of milk. Sometimes we do it after school or other times at the end of a busy weekend. It’s an opportunity for us to connect and talk with each other. As you an see below, these cookies are a hit with my crew!

Perfect Oatmeal Butterscotch Cookies
Ingredients
- 1 cup butter softened
- 1 cup white sugar
- 1 cup brown sugar firmly packed
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 3 1/2 cups old fashioned oats
- 11 oz butterscotch chips
Instructions
- Preheat oven to 350 degrees
- In a large bowl or stand mixer, mix together butter, brown sugar and white sugar. Add eggs and vanilla and mix until well combined and smooth
- In a separate bowl mix together flour, baking soda, salt and cinnamon. Add dry mixture slowly to butter sugar mixture and mix blend well.
- Mix in oatmeal until well combined.
- Stir in butterscotch chips until mixed well
- Form dough into 1 inch balls and place on a lightly greased cookie sheet.
- Bake for apprx 10-12 minutes until lighlty browning on the edges. Remove from oven and allow to cool on cookie sheet for apprx 2-3 minutes
- Move to a cooling rack and allw to cool all the way.
