Pistachio Pudding Cake

 

March is FINALLY here!! Yay!!! And I’m thinkin’ GREEN. I think green because the grass is turning……Spring is so very close……….and so is St. Patrick’s Day.

Thought I’d try out some new green recipes for this month. I snagged one the family seemed to like. The kiddos helped with the topping. Kids love to help in the kitchen. Please let them!

Pistachio Cake

Quick and delicious "pretty" cake with chopped pistachios covering the top. Yummy!
Ingredients
  • For cake:
  • 1 white or vanilla cake mix
  • 1 box instant pistachio pudding
  • 3 eggs
  • 1 C vegetable oil
  • 1 C milk
  • 6-10 drops of green food coloring
  • For Frosting:
  • 1 box pistachio pudding
  • 6 drops of green food coloring
  • 1 container Cool Whip ( I use Lite)
  • ⅓-1/2 C milk
  • 1 C chopped pistachios
Instructions
  1. For Cake:
  2. Preheat oven to 350 degrees. Spray a 9x13 cake pan with non-stick spray. With an electric mixer, mix together on low or medium low mix all ingredients for cake until well blended. Bake for approximately 25 minutes. Insert toothpick to test if done.
  3. For Frosting:
  4. In a large baking bowl fold pudding into Cool Whip. Add coloring. Pour in milk a little at a time.
  5. Frost cake with frosting. Sprinkle pistachios over the top. Refrigerate until serving.
