There’s a chill in the air, leaves are beginning to change color, and the crops are quickly drying out just in time for harvest. It’s hard to believe another season awaits us…the season of Fall where we get to enjoy football games, soccer games, leaf raking (and of course jumping in those leaf piles), hot apple cider, hay rack rides, apple pie, and all of those wonderful fall favorites.
Pumpkin bars are a favorite dessert of ours. They are a reminder of fall and those cozy spices like cinnamon, nutmeg, and maple. As you embrace the upcoming season and watch the progression of vivid fall colors, enjoy these Pumpkin Bars as a sweet fall treat.
- 4 eggs
- 1⅔ c. sugar
- 1 c. oil
- 15 oz. pumpkin
- 2 c. flour
- 2 t. baking powder
- 2 t. cinnamon
- 1 t. salt
- 1 t. soda
- Frosting:
- 8 oz. cream cheese, softened
- 4 T. butter, softened
- 4 c. powdered sugar
- 1 t. vanilla
- 1-2 T milk or more to get desired consistency
- Grease a 15 x 10 jelly roll pan. Combine on medium speed with a blender eggs, sugar, oil, and pumpkin. In a separate medium bowl, combine flour, baking powder, cinnamon, salt, and soda. Gradually add dry ingredients to pumpkin mixture. Mix until smooth. Spread in pan. Bake for 30 minutes at 350 degrees. Let cool.
- For the frosting, mix together cream cheese and butter until smooth. Then add vanilla. Gradually incorporate the powdered sugar and milk until desired consistency. Spread on cooled pumpkin bars.
