With fall-like temperatures, and some chilly mornings, warm pumpkin cake with hot coffee (or hot chocolate) sounded so cozy. As everyone at my house is pretty excited about pumpkin anything right now, I thought I would give this new pumpkin cake recipe a shot. It even has this delectable maple syrup glaze that gives it a bit more of an extra sweetness – it goes great with spice.
Pumpkin Cake with Maple Glaze
When I retrieved the pumpkin cake from the oven, the cinnamon-spice aroma filled up the house. You should have seen the look on the kids’ faces – it was priceless – their eyes widened and their faces were giddy with glee. “Pumpkin, Cake!?!” They just about couldn’t believe it!
As the hubs was about to take off for the morning, wrapped up a warm slice in a napkin and handed it to him as he was headed out the door – I hope that was a great start to his day, too! Enjoy!
- ½ c. unsalted butter, softened
- 1 c. brown sugar
- 1 c. pumpkin puree
- 2 eggs
- 1½ t. ground cinnamon
- ½ t. ground ginger
- ¼ t. nutmeg
- ¼ t. cloves
- 1 t. baking powder
- 1 t. baking soda
- 1 t. salt
- 1½ c. all purpose flour
- For the glaze:
- ½ c. butter
- 1 - 1½ c. powdered sugar
- 1-2 T. maple syrup
- ¼ c. milk, optional if glaze is too thick
- Preheat oven to 350 degrees F. Liberally grease a bundt pan or 9" loaf pan with cooking spray. Set aside.
- Meanwhile, in a bowl combine all of the above ingredients and with an electrick mixer, beat at medium speed, scraping down the sides as necessary.
- Pour mixture into prepared pan. Bake for approximately 35-40 minutes or until a toothpick comes out clean. Cool for about 15 minutes, then gently transfer to platter.
- While bread cools, make the glaze. In a small saucepan, heat butter over medium-low heat until melted. Continue cooking, watching butter carefully until it sizzles - about 3-4 minutes. Remove butter from heat and cool completely. Then using a whisk, stir in the powdered sugar and maple syrup until a soft glaze has formed.
- Pour glaze generously over top of the pumpkin loaf and let it set, about 30 minutes. Cut into slices and enjoy!
