Although it’s been warm and humid in Iowa these past few weeks, I’ve been trying to shift my mind into fall. On the list, seasonal recipes of course! My sister gave me the recipe to these Pumpkin Chocolate Chip Cookies as they are one of my nephew’s favorite fall treats. I was eager to bake them and fill my house with all those yummy fall scents. I was pleasantly surprised at how easy they were to make. They whip up in a jiffy and once they come out of the oven they are super moist and fluffy…almost cake like in my opinion. A light and tasty fall treat, indeed!

Gigi’s Old Fashioned Pumpkin Bread
Baked Pumpkin Cinnamon Sugar Donuts
Pumpkin Chocolate Chip Cookies
Ingredients
- 1 15 oz can of pumpkin
- 1 1/2 cup sugar
- 3/4 cup vegetable oil
- 2 eggs
- 3 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp vanilla
- 1 bag milk chocolate chip cookies
Instructions
- Preheat oven to 350 degrees
- mix all ingredients together except chocolate chips together with an electric mixer.
- Once batter is mixed well, stir in chocolate chips
- Drop on ungreased cookie sheet in tablespoon size and bake for 10-12 minutes
