It’s almost October and I’m loving all the pumpkin recipes. I had shared a few years ago that I didn’t do much cooking with pumpkin because my husband is not a fan. Lucky for me, my two boys have grown to like pumpkin flavored foods so I make just enough for the three of us to enjoy! While digging through my pantry last week I found this old pumpkin pie oatmeal recipe from my days of working at a wellness center. During the fall months I ate this many days of the week. Yum! Instead of eating it alone at my desk while working, yesterday I sat across the table from a talkative three year old and some legos while eating it together. This recipe is simple to make and the crushed pecans and sprinkle of brown sugar on top really enhance the flavor!
- 1 cup old fashioned oats
- 1¾ cup water
- ¼ cup pure pumpkin
- 1 tsp vanilla flavoring
- ½ tsp pumpkin pie spice
- ½ tsp cinnamon
- ½ tsp nutmeg
- 1 Tbs brown sugar
- Chopped pecans for topping
- Cool oatmeal in water as directed on container. Once cooked to desired consistency add all additional ingredients (spices and pumpkin) except pecans.
- Mix well and heat throughout.
- Top with chopped pecans and additional sprinkling of brown sugar.
