We LOVE Mexican food around here! How did we ever live without it?? Mr. Farmer informed me he’d like to have tacos for lunch. I thought through the ingredients I had and decided Mexican would work. I also had one lonely avocado. Of course it needed to be served up with the tacos in some fashion. The guacamole dip recipe I typically use was short a couple ingredients from my pantry so…I winged it. It worked. It was gone in a flash. 🙂
This is what I did:
- 1 avocado, mashed
- 1 package of guacamole dip (I love Mrs. Wages)
- 1 t. lime juice
- 1 t diced onion
- 3 T chip dip or sour cream
- 2 T salsa
- In a medium sized mixing bowl combine all ingredients. Transfer dip to a small serving dish. Place plastic wrap directly on top of the dip and stick in the refrigerator until mealtime. Place bowl of dip in the center of a plate. Circle your favorite taco chips around. Garnish with cilantro and a tomato if you have them. (I like to warm the chips in the oven for a couple minutes before serving.
So tasty and so good for us! And…it was ready to go in less than 5 minutes!
