This is an all-time favorite, that was shared with me over the years from my sis, Olivia. We spent many summers together as we were growing up, ‘sitting on the dock of the bay’. We played cards, games, read books, and of course, were working on our suntans. 🙂 We would splash in the lake water for an occasional ‘cooling off’ then back to business on the dock. After spending almost the entire day by the water, we would enjoy a smorgasbord of appetizers. Cucumber Dip was always welcomed and enjoyed by all. It is a great memory to me of summertime. I hope it becomes one for you, too!
- 1 (8 oz.) pkg. cream cheese, at room temperature
- 2 T. sour cream
- ½ cucumber - peeled, seeded, and chopped
- ½ packet of dry Italian salad dressing
- Mix cream cheese, sour cream, and seasoning. Then add cucumber. Serve with crackers or Pita chips. Keep refrigerated.
