We had a lot of rhubarb desserts when I was growing up. Mostly because my dad also had lots of rhubarb desserts as a kid and enjoyed them, so my mom, being the good wife she is, continued making them for him.
Are you familiar with rhubarb? As a child I was never really sure what exactly rhubarb was…I always thought it was maybe a fruit? Now that I am older and wiser 😜 I have learned rhubarb is actually a plant. It has large leaves and long edible stalks. Rhubarb grows very easily and takes little to no care for it to return year after year, making it an easy and inexpensive culinary option. In my opinion, rhubarb alone is not too tasty, the stalks have a strong sour taste. Which is why it is often served as a dessert. Adding in sugar and often times other fruit tend to lead people to think rhubarb is also a fruit.
Mixing rhubarb into a dessert dish is surprisingly enjoyable. A pie, cobbler or crisp make rhubarb a flavorful treat. This dessert is easy to make (by easy I mean, a little chopping, some sprinkling and drizzling) and is a great way to serve rhubarb. Next time you come across rhubarb, pick some up and give it a try!
- 4 cups diced rhubarb (1" pieces)
- 1 (3oz) pkg strawberry jell-o
- ¾ cup sugar
- 1 pkg white or yellow cake mix
- ½ stick butter, melted
- 1 cup cold water
- Grease a 9x13 inch pan. Arrange rhubarb pieces in bottom of pan.
- Sprinkle dry jell-o over the top
- Next sprinkle the sugar flowed by the cake mix.
- Drizzle butter over the top, followed by drizzling the water.
- Bake at 350 degrees for apprx 45 minutes.
- Serve topped with whipped cream or vanilla ice cream
