Roasted Asparagus with Mushrooms and Onion

Asparagus is abundant in Iowa, growing in many farm gardens and even in road ditches. It’s a family favorite, not only because it is healthy, but because it adds color and freshness to our meals.

Roasted Asparagus with Mushroom and Onion

Ingredients
  • 1 bunch of asparagus, trimmed
  • ½ red onion, sliced
  • 6 oz mushrooms, thickly sliced
  • ⅛ cup extra virgin olive oil
  • ¾ teaspoon of seasoning salt
  • fresh cracked pepper
Instructions
  1. Preheat oven to 400 degrees
  2. Line a large baking sheet with foil.
  3. Gently toss all ingredients together in a large bowl until vegetables evenly coated with oil.
  4. Spread evenly on baking sheets.
  5. Roast approximately 25-30 minutes, stirring vegetables once halfway through.
  6. Remove from oven when vegetables are tender and slightly charred.
