Ingredients
- 2 pounds red or white potatoes - halved or quartered
- 3 T. olive oil
- ½ t. kosher salt
- 2 t. minced garlic
- ¼ t. black pepper
Instructions
- Preheat oven to 400 degrees.
- Place potatoes in bowl with olive oil, salt, pepper, and garlic.
- Toss until the potatoes are well coated.
- Transfer to baking sheet and spread out into one layer.
- Roast in the oven for 40 minutes, or until brown and crisp.
- Turn potatoes one to two times to ensure even browning.
