Roasted Potatoes

We are a meat and potatoes kind of family.  This recipe for roasted potatoes is so easy and yet a perfect accompaniment to steak, meatloaf, roasted chicken, etc., etc., etc. Can you tell we make these a lot?

Ingredients
  • 2 pounds red or white potatoes - halved or quartered
  • 3 T. olive oil
  • ½ t. kosher salt
  • 2 t. minced garlic
  • ¼ t. black pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. Place potatoes in bowl with olive oil, salt, pepper, and garlic.
  3. Toss until the potatoes are well coated.
  4. Transfer to baking sheet and spread out into one layer.
  5. Roast in the oven for 40 minutes, or until brown and crisp.
  6. Turn potatoes one to two times to ensure even browning.
