Every so often I have one of those evenings where its nearly dinner time and I haven’t given our meal any prep or sometime any thought. (who are we kidding, that’s most nights these days :)) Insert this lifesaver…Sausage & Tortellini Bake! I actually first came across this recipe on a post thread of one of my friends asking for easy freezer meals. I instantly checked it out as freezer meals become a staple at my house during busy seasons. The original recipe was meatless so I added in some mild ground sausage and it was a hit. Quick and delicious.
- 11 bag frozen cheesed filled tortellini (19 or 20oz)
- ½ lb to 1lb of mild ground sausage (your preference)
- 1 jar of alfredo sauce (15oz)
- ½ jar of marinara sauce
- ¾ cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- Preheat oven to 350 degrees
- Cook tortellini according to package directions.
- At same time brown the ground sausage until cooked thoroughly and drain grease.
- In a large bowl mix together the two sauces.
- Drain tortellini and add to sauce mixture.
- Add sausage to bowl and stir until mixture is coated evenly.
- Pour into a lightly greased 8x8 baking dish
- Top with mozzarella cheese followed by parmesan cheese
- Bake for approximately 15 minutes until heated through and bubbly.
- If desired, broil for an additional 4-5 minutes to get the cheese crispy on top.
