It’s a beautiful but chilly day here in our Iowa rural scene. Do you have blue skies today? The sun is shining brightly and the clouds are big and billowy. Just beautiful. The downside? I never know what coat to wear these days! Today I pulled out my winter coat, once again. 🙁 Thought, for certain, it could be stored away until after Thanksgiving.
How was your Easter? I hope it went well for you. There were so many wonderful Easter Service videos to watch that we didn’t have time to view them all. The message was clear in each one. Jesus Christ is our Risen Savior, who triumphed over death. He is ALIVE!
This holy holiday of 2020 will be one we won’t forget, huh? Our table was set for three rather than twenty. Yes, there was some sadness in the midst of this Resurrection Sunday, as we sat down to eat. Yet, we were so thankful for our many blessings in the midst of mourning, loss, pain, suffering, illness, fear and dread. Our God knows all and our Lord and Savior, Jesus, died and rose again so that we would have eternal life with Him. “In this world we will have TROUBLE, but take heart, He has overcome the world. ” John 16:33b. Certainly one day Christians will experience forever and ever life to the fullest with no more pain, death and sadness. One day.
Our menu was filled with family favorites. One of the salads we prepared was seven layer salad. It’s just so easy and so delicious.
Seven Layer Salad
Ingredients
- 1 head romaine lettuce
- 1/8 C onion finely chopped
- 1 hard-boiled egg chopped
- 2-3 Slices cooked bacon chopped
- Cherry or grape tomatoes sliced in half or quartered (optional)
- 1/3-1/2 C C frozen peas
- 1 carrot chopped (optional)
- 1/2 C shredded cheddar cheese
- Homemade dressing:
- 3/4 C mayonnaise
- 1 T milk
- 1 t lemon juice
- Dash of garlic powder
- Dash of Salt
- Dash of Pepper
Instructions
- In a 9x13 dish, layer beginning with lettuce. Reserve the cheese for the topping. Reserve a few pieces of bacon for garnish.
- For dressing: Whisk all ingredients together and "frost" the top of the salad. Sprinkle shredded cheese atop, along with the few pieces of bacon.

This recipe gets eaten up quickly at our house. I hope it will at yours, as well.

Oh Denise, my eyes welled up when I read about you sitting down to a table of 3 instead of 20. I know how much your family gatherings mean to all of you. But I know God made Resurrection Day special in each of the households of your family members. And that is something to be so grateful for. We are blessed! Love ya, Cousin!

Thanks, Joan, for your timely comment. Yes, this, too, shall pass. Resurrection Sunday changed the world FOREVER!!! We are so, so grateful to know Jesus and to love Him. We can celebrate no matter whether we are alone or with 5,000. A couple of times I heard on the news that Easter would be cancelled. Actually, deep in my spirit, I chuckled, knowing that no one has the power to cancel Easter. No one.
