You can top the cake with a cream cheese frosting or the pudding frosting included in the recipe below (who doesn’t want to save a heap of calories!) This recipe is a winner for my entire family…ok, well, I take that back – not my 1 year old peanut who only eats Mac and Cheese, but for everyone else it is! Its a refreshing cake with no sugar added. Win, win!
- 1 yellow cake mix
- 3 eggs
- 1 cup milk
- 1 tsp baking soda
- 1 tsp vanilla
- 3-4 mashed ripe bananas
- Pudding Frosting:
- 1 small package instant vanilla pudding
- 1¼ - 1½ cup milk (mix these two ingredients together until well blended )
- (1) 8 oz carton cool whip (fold in and spread on cooled cake)
- Preheat oven to 350 degrees
- Mix all ingredients in a large bowl and pour into a greased 9"x13" pan
- Bake at 350 degrees for approximately 35 minutes until done (toothpick inserted in middle comes out clean)
- Remove from oven and let cool frost with cream cheese frosting of choice or pudding frosting above
