Simple Beef and Broccoli

The other week I bought a huge bag of precut broccoli florets from Costco.  Chopped up broccoli is something I like to have on hand with the busy months of spring.  Easy to whip up a quick side dish of broccoli for dinner or throw together a broccoli salad to take on a picnic.  Being the wife of a beef producer, something else we tend to have on hand (and in excess) is round steak and sirloin steak.  Late one afternoon with no dinner plans in mind but a fridge of precut broccoli and a freezer full of beef I decided to attempt a Chinese dish at home.  It was of great success, Yum!  I cut the steak into 3″ strips, threw some ingredients together to make a marinade, stir fried it all together and ended up with a delicious meal.   This Beef and Broccoli dish is a easy to make and full of flavor!  I foresee a Costco stop in the near future for some more broccoli. 🙂

Simple Beef and Broccoli

Easy and delicious Chinese meal at home.
Ingredients
  • 1 lb boneless round steak or sirloin steak cut into think 3-inch strips
  • 1 Tbs olive oil
  • 4 cups broccoli florets
  • ½ small onion, cut into wedges (optional)
  • 2 garlic cloves minced
  • Sauce/Marinade (amounts below for 1 batch, will use two batches total)
  • ⅓ cup reduced sodium soy sauce
  • 2 Tbs brown sugar
  • 1 tsp ground ginger
  • hot cooked rice
Instructions
  1. Make up a batch of the sauce above by combining soy sauce, brown sugar and ground ginger. Pour over steak strips and allow to marinate a minimum of 2 hours up to 24 hours.
  2. Heat large skillet or wok on medium-high heat and add in streak and sauce and cook until reaches desired doneness. Remove from pan and set aside
  3. Add 1 Tbs olive oil to pan and stir fry the broccoli and onion for approx. 4-5 minutes. Add in minced garlic and stir fry for another minute or two.
  4. Return beef to skillet and make another batch of sauce (soy sauce, brown sugar and ginger) and pour over beef, broccoli and onions. Cook and stir for 2 minutes.
  5. Serve over rice.

  1. This looks really delicious, Shelby! I have made something similar to this as a slow cooker, and I just throw in the round steak with a cup or two of beef broth, minced garlic, soy, and ginger – another variation for this recipe 🙂
