Simple, creamy and refreshing are three words I would use to describe this lemon dessert. Essentially it is just homemade lemon pudding (which is wonderful by itself) but adding some crushed graham crackers to the bottom of your serving dish and topping it with some fresh fruit make this dessert seem much more elegant. It lends itself well as a tea party treat, brunch side or after dinner dessert. A cool and refreshing lemon dessert for all these warm summer days.
- ¾ cup sugar
- ¼ cup cornstarch
- 2½ cups milk
- 3 egg yolks, lightly beaten
- 2 Tbs finely grated lemon zest
- pinch of salt
- ½ cup fresh lemon juice
- 1½ Tbs unsalted butter at room temperature
- optional: crushed graham cracker to layer bottom of serving dishes
- If using optional crushed graham cracker layer, place in bottom of serving dishes
- Whisk the sugar and the cornstarch together in a medium saucepan.
- Add in the milk and whisk until smooth.
- Add the egg yolks, zest and salt and cook over medium heat, stirring frequently at first and constantly towards the end until thickened enough to thickly coat the back of a spoon (make sure you cook long enough it is thickened or your pudding will be runny)
- Remove the pan from the heat and stir in the lemon juice and butter. Pour through a strainer into 4 individual serving dishes.
- Let cool to room temperature. Chill loosely covered for at least 2 hours before serving.
- Serve chilled topped with fresh fruit as a garnish. Dallop whipped cream on top if desired
