We love guacamole in our house and make several different versions. Simple Salsa Guacamole is a chunky version that comes together really quickly because I use a salsa short-cut.
The recipe for Simple Salsa Guacamole was born one day when I was following a recipe for guacamole and it called for chopped tomatoes, chopped onion, chopped peppers, and cilantro. It dawned on me that all of those ingredients are already in salsa, so I took the easy way out. Instead of doing all of that chopping, I simply added some of our favorite salsa.
Here is how I make it: I cut open the avocado and score it using a paring knife.
I scoop out the flesh of the avocado and stir in a few tablespoons of salsa, a little lime juice, and some taco seasoning.
I mix it all together gently, and chill until ready to eat. Did you know that if you keep the avocado pit in the guacamole until serving, it keeps it from turning brown? My friend, Amie, shared this tip with me, and it works!
I serve it with tortilla chips or cucumber slices (for an extra healthy snack).
ps- My son calls it brocomoli. Isn’t that cute?
