In my house of picky eaters, we have somehow found a common denominator of shrimp. I can’t believe that shrimp is a dish all three kids will eat but I am pleased that they do. Shrimp is high in vitamins and minerals and contains the omega-3 fatty acids which are good for their growing brains. I almost feel like I have tricked them into eating something healthy…if they only knew. Ha!
This shrimp scampi is a simple and classic dish. A light and flavorful dish served over pasta or in a bowl with a large piece of bread. It’s a nice change of pace from all the grilling we’ve been doing, but still just as easy to make.
Simple Shrimp Scampi
Ingredients
- 2 Tbs extra virgin olive oil
- 2 Tbs butter
- 4 garlic cloves minced
- 1/2 cup chicken broth or dry white wine
- 3/4 tsp salt or to taste
- 1/8 tsp crushed red pepper flakes or to taste
- Ground pepper
- 2 lbs large shrimp shelled
- 1/3 cup chopped parsley
- 1/2 lemon juiced
- Cooked pasta or crusty bread
Instructions
- In a large skillet melt butter with olive oil. Add garlic and saute until fragrant. Add broth or wine, salt, red pepper flacks and black pepper and bring to a simmer. Let liquid reduce to about half. Takes apprx 2 minutes.
- Add shrimp and saute until they turn pink, approx. 2-4 minutes.
- Stir in parsley and lemon juice and heat.
- Serve over pasta or accompanied with crusty bread
