Anybody out there love Ramen as much as I do? We eat this a few times a week for lunch. It’s especially great in the cold months with some chicken and steamed veggies thrown in. A quick and comforting lunch for the kiddos and me! (We love Ramen so much that I buy the 48 pack at Costco… 🙂 )
Recently I decided to combine my love of Ramen with another love of mine…Thai food. The end result were these Simple Thai Peanut & Chicken Ramen Noodles.
They are divine and so simple to make. Therefore, I have been making them several times a week!
I start with a package of Ramen and while it’s cooking (for only 3 minutes, yay!) I mix a little peanut butter, fresh cilantro, ground ginger, and Siracha in a soup bowl.
Once the Ramen is done cooking, I add a little broth to the soup bowl to thin my peanut sauce a bit. Then I add the remaining broth and noodles to bowl, top with a little more Siracha and cilantro, and POOF: lunch is served! A spicy, comforting, delicious, exotic lunch I might add. The end result tastes nothing like the original Ramen but instead like a delicious bowl of peanut noodles from a favorite Thai restaurant.
Today I had some leftover cooked chicken, so I added that. Other add-in ideas:
- pea pods
- steamed broccoli
- scallions, chopped
- peanuts (on the top to add crunch)
- 1 package chicken flavored Ramen noodles
- 1 T peanut butter
- ½ t ground ginger
- 1 T Siracha (add more if you want more spice)
- 1 T fresh cilantro, chopped
- Optional add-in ingredients:
- chicken, cooked and cubed
- pea pods
- steamed broccoli
- scallions, chopped
- peanuts
- Prepare the Ramen according to package directions. Add the flavoring packet as well.
- While the Ramen in cooking, mix the peanut butter, ginger, Siracha, and cilantro together in a soup bowl.
- When Ramen is cooked and ready to serve, remove about 2 tablespoons of the broth and add to the peanut sauce in the soup bowl to thin a bit. Stir until combined.
- Add the remaining broth and noddles and any mix-in ingredients of your choice. Top with more fresh cilantro and Siracha.
