My mom has been making this simple, refreshing strawberry pie since I was a kid, and it’s absolutely one of my favorites. My kids now request it often, as well. It’s cold, refreshing, and I just feel “Summer is Here!” when I bite into it. I thought since today, Memorial Day, is the unofficial start of summer that it was the perfect time to share this delightful summer treat with you, our dear readers.
Start with 1-2 pints of fresh strawberries and pre-made pie crust. If you need a super simple pie crust, check out Aunt Kay’s {3 Ingredient Pie Crust}.
Make the simple filling using strawberry jello, cornstarch, and sugar and arrange sliced strawberries over crust.
Chill until set and enjoy!

- 1-2 pints fresh strawberries, sliced
- 1 C sugar
- 1 3.0 ounce box strawberry jello (regular or sugar-free)
- 2 T cornstarch
- 1 C water
- 1 prepared pie crust
- Cool-Whip or whipped cream, for serving
- In a medium saucepan, whisk together sugar, Jello, cornstarch and water and heat over high heat until mixture comes to a boil.
- Remove from heat, and let cool.
- Arrange berries over crust. Pour cooled Jello mixture over berries.
- Refrigerate until set.
- Serve with Cool-Whip or whipped cream, if desired.
