Spring is officially here and boy are we glad! The snow is melting (leaving a huge muddy mess) and we are enjoying the outdoors. With the frigid below zero wind chills we experienced earlier this month the 40’s and 50’s this week felt great. With the arrival of Spring we continue to be busy with many activities, outdoor chores, calving and planting on the horizon. Year round I love the slow cooker but for some reason these past few weeks its been an excellent tool to getting a home cooked meal on the table shortly after we get home.
Cooking baby back ribs on a slow cooker is an excellent way to eat ribs. The low and slow cooking of the meat causes it to become very tender and nearly fall off the bone. Then placing the ribs in the oven to broil at the end is an extra effort but worth it to turn the sauce into more of a glaze and to char the edges just a bit for added depth of flavor.
Serve with these Make Ahead Mashed Potatoes and a veggie of choice and you have a delicious meal with minimal effort at meal time.
