Still waiting for Spring? Or if you are like me, you are also waiting for life to slow down – but thus far neither have happened. But good news, I am here with an easy and delicious slow cooker meal to give you a little reprieve. Full of flavor and creamy, serve this Tomato, Sausage and Tortellini soup with a side of garlic bread and call it good.

{Slow Cooker} Tomato, Sausage & Tortellini Soup
Ingredients
- 1 lb sausage
- 32 oz chicken broth
- 1 28 oz can petite diced tomatoes
- 2 10.75 oz tomato soup
- 16 oz chive and onion cream cheese spread softened
- 18 oz refrigerated cheese tortellini uncooked
Instructions
- In a skillet brown sausage until no longer pink, drain grease and transfer to slow cooker
- Add chicken broth, tomatoes and tomato soup, cover and cook on low for 6 to 8 hours
- Stir in cream cheese and tortellini. Cover and cook on high for 20 to 30 minutes until tortellini is cooked through.
- Top with parmesan cheese if desired and enjoy!
