Do you know kids who love s’mores? Admittedly, some adults (myself included) love them, too. We seem to never quite get enough of them… all year round. My ten year-old daughter loves to experiment with the microwave and melted chocolates and marshmallows. She loves making puppy chow, and she’s also discovered the goodness of a microwave marshmallow when it’s too cold for roasting marshmallows. The microwave can give them ‘mallows a terrific caramelized effect!
As we were looking for another new creation to try with the elements of graham, marshmallows, and chocolate – we found these simple and delicious S’mores Popcorn Balls. If you like sweet gooeyness with some crunch and a pinch of chocolate, then you will find these as a fun and unique alternative to a traditional s’more.
These are versatile for eating right away, or can be wrapped up in saran wrap with a festive ribbon for giving away. We handed some out to friends, and also slipped some into Dad’s cooler for his long day in the combine. The kiddos loved making these and being a part of something to give to others.
- 1 bag natural microwave popcorn
- ¼ c. butter
- 10 oz. bag mini marshmallows
- 2¼ c. Golden Grahams cereal
- 1 c. mini semisweet chocolate chips
- Pop popcorn according to package directions, set aside
- In a large saucepan, melt butter
- Continue cooking until butter begins to turn golden brown
- Add marshmallows, and stir constantly until marshmallows have melted
- Remove from heat, and stir in vanilla
- Add popcorn and Golden Grahams, and fold into marshmallow mixture.
- When mixture is cool enough to handle, lightly spray your hands with nonstick cooking spray.
- Scoop about 1 c. of the popcorn mixture and smoosh into a ball.
- Sprinkle with mini chocolate chips, and gently press them into the popcorn ball.
- Place on a sheet of waxed paper, parchment paper, or silicon baking mat to cool.

For the S’mores popcorn balls, you mention adding vanilla in step 5, however, I do not see the vanilla listed in the ingredients and do not know how much I should add.
