I just love watching cooking shows. Do you? While cooking away, I flipped on the TV to a cooking station to find some delectable recipes from the Charleston, South Carolina area. Pimento has always been a tasty treat for me, so when they starting talking about pimento cheese sandwiches, I took notice! Pimento, mayo, cheddar cheese and some really good bread. Who wouldn’t want these!
In South Carolina one tradition is to cut off the crusts, quarter them and make little tea sandwiches out of them.
Another tradition is grilling them and serving them up with a cup of their favorite soups and stews–something with seafood, no doubt. I’m trying both.
Recently Molly posted almost the same recipe in the spread. Thought you might like to try the sandwiches! 🙂
Soups on!! And so are these delectable golden jewels. Think I’ll call them my Southern Belles.
- 8 oz pkg Shredded sharp cheddar cheese
- ½ C canned pimentos
- ½ C mayonnaise
- pinch of onion powder
- soft white bread or English Muffin bread for grilled cheese
- Combine first 4 ingredients in a large bowl. For tea sandwiches cut off crusts of bread. Fill sandwich and cut in 4 sandwiches. Arrange standing up. For grilled sandwiches, turn grill on medium hi heat. Butter both sides of sandwich. Grill approx 4 minutes per side.
