It is finally the month of March! Yay! With one of the snowiest February’s on record, these past few weeks I have been giving myself a pep talk “It’s almost March, Spring is around the corner” It seemed to help with accepting the last week of February…and then I looked at the extended forecast. Record temperature lows for the foreseeable days in March, not what I was envisioning with my private pep talks about March being right around the corner. Bummer!
Last week on the drive to school, my kids inquired about how long it was until Spring. I told them the first official day of Spring was still just over 20 day away. I could see the disappointment on their faces as they stared out the windows at the snow covered fields. In an attempt to cheer them up, I informed them that they are living in a historical year. As they grow older, they will be able to remember a record breaking snow fall February and a record breaking low temperature March. I could see some excitement coming back to their faces! The next questions was, what is the next holiday? St. Patrick’s Day! My children have fond memories of St. Patrick’s Day from Preschool and since always request “Leprechaun Treats” to celebrate. After I dropped the two older kiddos off at school I headed to the grocery store for my weekly stop. I decided to try to come up with a fun treat we could make together as part of St. Patrick’s Day (yes we are early, but we needed something fun to do with all the snow).
In February, I made a simple and fun Valentine’s Snack Mix, which they seemed to love. All I needed was marshmallows, M & M’s and some other ingredient to add in. Hmmm…. John and I were walking down the cereal aisle and I saw that Golden Grahams were on sale. Perfect! Those would taste great in the mixture and the “golden” part could be the leprechaun’s treasure.
Just so happened we had another snow day this week, so on the agenda was to make this fun St. Patrick’s Day Snack Mix! The kids thought it was great and as I was taking a picture for the blog, they asked if they could be in it too. Sure! (Only captured 2 of the 3 kiddos as John was too busy eating the non-green colored M&M’s to join in the picture.)
Hope that March kicks off in a great way for you and your families…even if it is record breaking. If you are looking for a super simple and fun snack, give this snack mix a try!
