Last year while I was out Christmas shopping…oh, remember those days of shopping in person? I found these adorable snowflake cookie stamps and instantly thought how fun it would be to bake with my daughter and end up with these festive snowflake cookies. Perfect with a cup of coffee or the kids enjoy them drizzled with frosting.
They are simple to make with only four ingredients you most likely have on hand and a little time, you can have these ready to go in a jiffy.
Stamped Shortbread Cookies
Ingredients
- 2 sticks salted butter, softened
- 3/4 cup sugar
- 2 tsp pure vanilla extract
- 2 1/4 cup flour
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with a silicone mat or parchment paper
- In a large bowl combine softened butter, sugar and vanilla. Whip with an electric mixer for 1 minute or until nice and fluffy
- Slowly mix in flour and stir until just combined and the dough is smooth
- Using a medium cookie scoop or 1.5 Tbs scoop out the dough and roll it into a ball. If using stamps, lightly flour your stamp and firmly press down on the dough ball until about 1/4" thick. Slowly pull stamp off of cookie dough
- Bake for 10-12 minutes or until the bottoms are slightly golden (you don't want tops or edges to brown)
- Remove from oven and transfer to cooling rack
- Once cooled, Enjoy!
