It’s grilling season now, which for me means fast and easy meals. I usually don’t do all the fancy stuff with marinades and basting, etc. The hardest thing for me to remember in meal prep this time of year, is to take the meat out of the freezer in advance. This way, when I hear the door open, I’m ready for action. And, as most of you know, we are beef producers, so there is usually beef in our freezer.
During these long June days, I never know when Mr. Farmer is going to pop in for supper, so grilling something quick is a perfect solution. Plus, it’s out-of-this-world yummy!!!
And while the meat is grilling, I pop some small red potatoes into the microwave. Takes about 4 minutes. They are already clean and ready for cooking.
While the spuds are cooking, I turn over the steaks and turn down the heat a bit. (Yes, I’ve been known to burn the beef!)
I grab a small skillet, heat up some olive oil and a little butter, slice my hot potatoes and fry them until brown and crusty. Sprinkle with salt, course pepper and dill (fresh from the garden, if possible. Dill is super easy to grow, and it is the perfect seasoning with a meal of beef.) This takes about 3 minutes.
I pull out some fresh vegetables from the refrigerator “veggie” drawer, and some ranch dressing from the door. It’s good on almost anything. 🙂
And in the”fruit” drawer I find blueberries and peaches. That takes about 1 minute to spoon into the individual bowls.
Quick…..super easy……….and yummy. Can’t beat it! And then……………………………. we bow our heads in thanks……
