It’s hard to believe that next month it will have been a whole year since I was diagnosed with type 1 diabetes. I’ve learned so much this year about trusting God and knowing that he will take good care of me. One verse that I have continually focused on this year is Isaiah 26:3
You will keep him in perfect peace,
Whose mind is stayed on You,
Because he trusts in You.
I’ve also learned a lot about eating good foods that are the easiest for me to process, just like this delicious Steak Salad with Healthy Balsamic Vinaigrette.
For me, eating a low-carb diet has worked well because the fewer carbs that I eat, the less insulin I have to take. Being a vegetable and meat lover truly makes choosing low-carb meals pretty easy. I mean, look at this delicious salad that my family enjoyed this week! Low-carb meals do not mean low-flavor!
This salad is basically a cobb salad, and you can customize it to include any of your favorite components. For this particular meal, we used
- Romaine (arugula would also be delicious!)
- hard boiled eggs
- blue cheese (feta or sharp cheddar would be great, too)
- red onions
- tomatoes (they’re so wonderful this time of year in Iowa)
- New York strip, grilled (sirloin or rib eye are lovely as well)
- healthy balsamic dressing (blue cheese or ranch dressing would be terrific, too)
So, enjoy this delicious, healthy salad any way you’d like. Throw it together in minutes, and then perhaps enjoy is outside as we savor the remaining warm evenings of our season.
Steak Salad with Healthy Balsamic Vinegar Dressing
Ingredients
- For the salad:
- 2 cups of lettuce Romaine or spring mix
- 1 hard boiled egg chopped
- 1 Roma tomato chopped
- 2 T blue cheese
- 2 T red onion chopped
- 8 oz grilled steak sliced (New York strip, Ribeye, or sirloin)
- For the balsamic dressing:
- 1/2 C olive oil
- 1/4 C balsamic vinegar
- 1 t garlic minced
- 2 squirts liquid Splenda can substitute 1 T honey if you don't need to be careful with carbs
- 1 t Dijon mustard
- 1/2 t salt
- 1/2 t pepper
Instructions
- Place all the salad ingredients on a plate.
- In a mason jar with lid, shake together all dressing ingredients.
