The Summer heat has hit the home front…so, out comes the swimming pool, sprinkler, slip n’ slide and of course ice cream!
What better way to cool off after a busy day outside in the heat than with an ice cream dessert! This Strawberry {Chex} Ice Cream Dessert is simple to make, gluten free and delicious. It is a treat, as a child, I could count on being in my Mom’s freezer during the warm months of summer. Strawberry ice cream sandwiched between a sugary, buttery, crunchy crust…..mmmm, my mouth is watering! Is yours? You can pull this tasty dessert out of the freezer and serve up just a few pieces or the whole pan at any time
The simplicity of this dish and the fact it can be made ahead and stored in your freezer, it is now a summer dish my kids can count on after a busy day playing in the sun!
- 2½ cups Rice Chex Crushed
- 2 cups Brown Sugar
- ½ cup butter melted
- ½ cup nuts, chopped (pecans or almonds)
- ½ cup coconut
- ½ gallon of your favorite strawberry ice cream (softened)
- Whipped cream for topping (optional)
- Fresh strawberry for topping (optional)
- Mix first 5 ingredients (all but ice cream).
- Press ½ of mixture in bottom of 9x13 pan
- Spread softened strawberry ice cream on top of mixture
- Sprinkle remaining mixture on top of ice cream
- Cover and freeze until ready to serve
