I’ve been living the no-sugar, low-carb, diabetic life now for about six weeks, and I’m happy to report that I am still enjoying lots of delicious foods! The Christmas parties have begun, and I’ve been craving the microwave fudge that I’ve made in past years, so I adapted the recipe, keeping all of the essentials, and came up with this. I can assure you that I’m not missing out on anything except excess carbs and high blood sugar… ;).

Yes, you can enjoy all the goodness of an Almond Joy Candy Bar without the sugar and without the carbs. And it’s absolutely so easy to make. It’s even made in the microwave, and takes no longer than five minutes to whip up.
Recently, I discovered a low-carb sweetener called KetoseSweet that I love. It measures just like sugar (yay! no conversions!), comes in both a liquid and a powder form, and only has 4 grams of carbs in each teaspoon. Sugar-free Almond Joy Dark Chocolate Bites
Ingredients
- 1/2 C coconut oil
- 1/4 C unsweetened cocoa powder
- 1 t coconut flavoring
- 3 t KetoseSweet Natural Sweetener liquid
- 1/4 C almonds whole, chopped, or sliced
- 1/4 C unsweetened coconut
- Small pinch of sea salt
Instructions
- If the coconut oil is solid, soften it in the microwave for about 15 seconds, until liquid.
- In a medium sized bow, combine the coconut oil, cocoa powder, KetoseSweet sweetener, salt, and coconut flavoring, and stir well.
- Line an 8 x 8 dish with parchment paper or foil. Spread the chocolate mixture evenly onto the parchment paper or foil.
- Sprinkle the coconut, almonds, and sea salt over the top.
- Pop into the freezer until hardened. When ready to eat, break into pieces.
