I just love angel food cake. Do you? It makes me think of my Grandma Maxine, holidays, and spring. I love how angel food cake is so light and airy!
This past year, I’ve been making a sugar-free version of this treat, and I must say, it’s very delicious! I have adapted my recipe from my favorite cookbook, Around the Family Table by Glenda Groff. All of her recipes are superb!
Give it a try! You won’t miss the sugar for a second. This would be perfect for Easter or Mother’s Day, too.
Sugar Free Angel Food Cake (adapted from Around the Family Table by Glenda Groff)
Ingredients
- 2 C egg whites
- 3/4 C Swerve Confectioners Sweetener divided
- 1 ½ t vanilla
- ⅞ C Oat Fiber I use Trim Healthy Mama brand
Instructions
- Preheat oven to 350°
- Beat eggs whites until semi-stiff. Slowly add 1/4 cup Swerve, cream of tartar, and vanilla.
- Continue beating this egg white mixture for two minutes.
- Combine the remaining 1/2 cup Swerve and the oat fiber. Fold into the egg whites.
- Spoon the batter into an angel food cake pan. Bake for 45 minutes or until top is lightly browned.
- Cool cake upside down completely before cutting from pan.

My favorite way to eat this cake is with this homemade strawberry sauce. So good!
