I just love angel food cake. Do you? It makes me think of my Grandma Maxine, holidays, and spring. I love how angel food cake is so light and airy!

This past year, I’ve been making a sugar-free version of this treat, and I must say, it’s very delicious! I have adapted my recipe from my favorite cookbook, Around the Family Table by Glenda Groff. All of her recipes are superb!

Sugar Free Angel Food Cake

Sugar Free Angel Food Cake (adapted from Around the Family Table by Glenda Groff)

Cook Time 45 minutes
Serving Size 8

Ingredients

  • 2 C egg whites
  • 3/4 C Swerve Confectioners Sweetener divided
  • 1 ½ t vanilla
  • C Oat Fiber I use Trim Healthy Mama brand

Instructions

  • Preheat oven to 350°
  • Beat eggs whites until semi-stiff. Slowly add 1/4 cup Swerve, cream of tartar, and vanilla.
  • Continue beating this egg white mixture for two minutes.
  • Combine the remaining 1/2 cup Swerve and the oat fiber. Fold into the egg whites.
  • Spoon the batter into an angel food cake pan. Bake for 45 minutes or until top is lightly browned.
  • Cool cake upside down completely before cutting from pan.
