I had strawberry Jell-O and fresh strawberries on hand, but any flavor of Jell-O and berries are delicious in this. I love mixing blueberries, raspberries, and strawberries together. I think I’ll make that combination soon!
These are so fun to make with the kids and enjoy while I read aloud to them during these hot summer afternoons.

Sugar Free Creamy Fruit Bars
Ingredients
- 1 .6 oz package of Jello-O Strawberry Flavor Sugar Free Gelatin
- 2 1/4 oz envelopes of Knox Unflavored Gelatine
- 1 C boiling water
- 1/2 C canned coconut cream
- 4 C fresh berries blueberries, raspberries, chopped strawberries
- 2 squirts liquid Splenda or 1/4 C Splenda (the powder)
Instructions
- Mix first 2 ingredients in a medium bowl. Add boiling water; stir 2 minutes until completely dissolved.
- Stir in the coconut cream.
- Pour into a 13×9 inch-pan sprayed with cooking spray.
- Stir in berries and refrigerate 3 hours or until firm.
- Cut into 12 bars and top with sugar-free whipped cream, if desired.
- Keep refrigerated.
