One of the Christmas traditions that I love the most is baking beloved recipes that my grandmas have passed down to me. We have lots of wonderful recipes that we make EVERY YEAR including my Grandma Betty’s tea ring and my favorite recipe, Grandma Maxine’s Soft Ginger Cookies.
Grandma Maxine’s Soft Ginger Cookies are especially near and dear to my heart because I used to make them for my college friends many years ago when we were all roommates, and I still get texts every year like this one…
“Giving away Grandma Maxine’s ginger cookies to our neighbors. I didn’t have quiiiiiiiite enough molasses but I think they turned out anyway. So fun to use your recipe!” -Erika

Back to the cookies… Now that I have type 1 diabetes, I decided it was high time to figure out a sugar-free recipe for ginger cookies so I could keep enjoying them. On Sunday, I pulled out Grandma Maxine’s recipe and made some tweaks, and success! They taste just like hers! The texture is slightly different (but still delicious), and the spices are exactly the same.
I have been eating these cookies the last few days, and they have brought me so much joy. With each bite, the spices take me back to Christmas at her house on the farm. She was so gentle, godly, and sweet, and I just love thinking about her.

Sugar Free Ginger Cookies
Ingredients
- 1 C Baking Blend or use half almond flour, half coconut flour
- ¾ C Swerve or use your favorite sweetener
- ¼ C oat fiber
- 1½ T ground ginger
- ½ t cloves
- 1 t ground cinnamon
- ½ t salt
- ½ t glucamannon (optional)
- 2 t baking soda
- 1 egg
- 1 T molasses
- ½ C unflavored coconut oil or butter at room temperature
Instructions
- Preheat the oven to 350°. Spray 1 large cookie sheet.
- Mix everything together and then spoon walnut sized balls onto the sheet. I use a cookie scoop. Make a criss-cross pattern on each cookie with a fork.
- Bake for 8-10 minutes.

many of these ingredients are “foreign” to me….where can I get them…? Sugar free recipes are very much appreciated…I thought it would be as easy as just substituting Splenda or another for the sugar….but ????
