The comforts of home and good food are becoming more and more important to me with each passing season. Each day we are bombarded with ominous news, and I feel that the Lord is prompting me to pray “without ceasing” and to do my best to create a places of rest and peace in my home and in our family’s life. I’ve been trying to stay away from social media as much as I can and to instead invest my time in helping my kids find beauty and comfort in our daily lives. We’ve been spending time hiking, going to the shore, biking, resting in God’s creation.
And my family and I have been making really good comfort food including soups and this new healthified French toast. I’m going to share this new recipe today, and I hope you love it!
Doesn’t this look like a an absolutely delicious, satisfying breakfast? And it is! And I’m happy to report that it is completely sugar-free, and is made with a low-carb bread, so it is so gentle on blood sugars. It is also made with egg-whites instead of whole eggs, so the fat content is much lower.
This is a quick and easy breakfast that is easy enough to even make on school mornings. We started school two weeks ago, and its hard to believe that this will be our 13th year of homeschooling. God has really been good to us.

And although it is wonderful to take comfort in “comfort foods,” it is so much better to take comfort in our Heavenly Father. So I leave you with this verse-
2 Corinthians 1:3 "Praise be to the God and Father of our Lord Jesus Christ, the Father of compassion and the God of all comfort, who comforts us in all our troubles, so that we can comfort those in any trouble with the comfort we ourselves receive from God."
Sugar-Free, Low-Fat French Toast
Ingredients
- 4 egg whites (1/2 C liquid egg whites)
- 2 T cinnamon
- 4 T Gentle Sweet, Truvia, or Swerve
- 1 ½ t vanilla or maple extract
- ⅛ t salt
- 8 pieces sprouted bread Ezekial Bread is our favorite
Instructions
- In a bowl, whisk together everything except the bread.
- Spray a frying pan or griddle with cooking spray and heat to medium-high heat.
- Dip each piece of bread in the egg mixture, letting it soak up the liquid.
- Cook for a few minutes on each side until lightly toasted.
- Serve with maple syrup (I buy sugar-free at Walmart).
