These pumpkin bars have lots to love including the fall spices of cinnamon, ginger, and nutmeg. And they have the most delicious and decadent cream cheese frosting. But what they don’t have is the unnecessary sugar. So you can eat them for breakfast, lunch, and dinner (which is what I’ve been doing the last couple of days!)
Seriously, you’ve got to give these a try. They are so super delicious and healthy that you’ll really love them.
Here are a few other sugar-free pumpkin treats to make your fall lovely.
Sugar Free Pumpkin Bars with Cream Cheese Frosting
Ingredients
For the Bars
- 1 ½ C Baking Blend or equal parts almond flour and coconut flour
- 2 t cinnamon
- ½ t cloves
- ½ t ginger
- 1/4 t nutmeg
- ½ C Gentle Sweet, Truvia, or Swerve
- 1 15 oz can pumpkin puree
- ½ water
- ½ egg whites
- 3 eggs
- 1 t vanilla
For the Cream Cheese Frosting
- 8 oz cream cheese (or ⅓ less fat cream cheese) at room temperature
- ¼ C whipping cream
- ½ t vanilla
- 2 T Gentle Sweet, Swerve, or Truvia
Instructions
For the Bars
- Preheat the oven to 350°. Spray at 9 x 13 pan with cooking spray.
- Mix the ingredients for the bars using a whisk or a stand mixer.
- Spread the batter into the pan and bake for 25-30 minutes, until a inserted toothpick comes out clean.
- Cool bars completely before frosting.
For the Frosting
- So that your sugar substitute is not grainy and gritty, blend the substitute of your choice. I put the Gentle Sweet in my singer serve smoothie cup and blend for a few seconds.
- Beat the cream cheese until smooth and then add the other ingredients and beat again until soft peaks form, which is about 1 minutes. .
- When the pumpkin bars are completely cool, frost them and put them in the refrigerator to chill. Store in the refreigerator. These bars taste great cold!
