Happy Thanksgiving to all of our dear readers! Doesn’t this Sugar Free Pumpkin Pie Cheesecake look so delicious? I’ll tell you all about it below, but first I want to ask if you, like me, feel that the holidays could be extra special and meaningful this year?
Today I had the privilege of doing an interview about our new book, The Gathering Table. The journalist asked me, “Can the holidays be special this year even if you can’t be with your entire family?” And I heartily said, “Yes!” I explained to her that while food and family make Thanksgiving really fun, the main point of this holiday is all about commemorating the faithfulness of God.
God’s timing is perfect, and there is a chapter in our The Gathering Table which focuses precisely on this mission: commemorating the faithfulness of God. I wrote:
I don’t know about you, but sometimes it’s easier for me to place my focus on the difficulties and disappointments in life than to remember God’s blessings, answers to prayer, and daily provision. The Gathering Table
And that’s where we are this year, isn’t it? This year we’re in the middle of a pandemic and a very unsettling election. Our family has to limit the amount of news that we let into our home because it leaves us feeling anxious and weary.
But that’s exactly where Thanksgiving comes in! Did you know that Thanksgiving was made into a national holiday by President Abraham Lincoln during the Civil War because he know how important it was to remember the faitfulness of God.
I think of this verse:
Remember the former things, those of long ago; I am God, and there is no other; I am God, and there is none like me. Isa 46:9
So let’s make a point of remembering all of ways that God has been faithful to us this year and in years past. Let’s talk about it with our children at the Thanksgiving table and maybe with Grandpa and Grandma over Facetime. Let’s write them down or maybe even make a Thankful Tree.
And something that I’m incredibly thankful for this year is this Sugar Free Pumpkin Pie Cheesecake.
That may sound silly, but when I was diagnosed with diabetes two years ago, I thought that I’d probably never be able to enjoy desserts again. And desserts are one part of holidays that are just so fun! But over the last couple of years, I’ve been introduced to some pretty wonderful sugar free deserts including Sugar Free Pumpkin Pie and Sugar Free French Silk Pie.
And then this week, a new cookbook called Trim Healthy Future was released, and this Sugar Free Pumpkin Pie Cheesecake recipe came into my life! It is truly SO SO delicious and special to me because it will make Thanksgiving festive and fun once again.
If you love the pumpkin pie and cheesecake, then you will love how these are swirled together in this delicious recipe. I’ve been serving it to family without telling them there is no sugar, and they had no idea. You’ll LOVE it! Add it to this year’s Thanksgiving menu; you’ll be so glad you did.
Sugar Free Pumpkin Pie Cheesecake
Equipment
- 1 cheesecake pan
Ingredients
Cheesecake Layer
- 1 8 oz block 1/3 less fat cream cheese (at room temperature)
- ½ C Gentle Sweet, Truvia, or Swerve (or favorite sugar substitute)
- 1 egg
- ½ tsp vanilla
- ½ tsp maple extract
Pumpkin Pie Layer
- 1 C pumpkin puree
- ¾ C Baking Blend (or equal parts almond and coconut flour)
- ½ C Gentle Sweet, Truvia, or Swerve (or favorite sugar substitute)
- 1½ tsp pumpkin pie spice
- ½ tsp baking powder
- ½ tsp baking soda
- 2 pinches mineral salt
- ½ tsp vanilla
- ½ tsp maple extract
- 1/2 tsp butter extract
- 1 egg
- Fat Free Reddi Whip for topping (optional)
Instructions
- Preheat oven to 375° and spray a cheesecake pan with non stick baking spray.
- Mix the cream cheese and Gentle Sweet (or sweetener of your choice) in a stand mixer or in a medium sized bowl and hand mixer. Mix until smooth. Stir in the remaining cheesecake layer ingredients and pout into the prepared cheesecake pan.
- In the same bowl (no need to wash it out!) mix together all of the pumpkin pie layer ingredients and spread onto the cheesecake layer. Swirl it a bit and smooth it out with a knife.
- Bake for 35-40 minutes or until well set. Chill until ready to serve, and then top with Fat Free Reddi Whip.
