How many of you out there love scotcharoos? You know, those absolutely delectable peanut butter/butterscotch/chocolate bars that are addictive? I’m not sure if these are just an Iowa treat or are popular around the USA… If you know, leave me a comment below.
Last week, I made these sugar free scotcharoo bites, and they were so great! If you want the flavors of scocharoos without the unneeded sugar and carbs, these are for you. I think the ingredient that makes these over the top delish is the butterscotch chips. I found them at Wal-Mart.
These are quick and easy to whip up, and all you’ll need is your microwave. I use my tiny cookie scoop to make scoops and then roll them into balls while I’m melting the chocolate and butterscotch chips in the microwave.
Melt the chocolate chips and butterscotch chips in the microwave in 30 second increments, stirring after each round. Be careful not to scorch the chocolate!

Sugar Free Scotcharoo Bites
Ingredients
- 1/4 C butter room temperature
- 1/3 C natural peanut butter
- 1/3 C Gentle Sweet (Truvia, Swerve, or Pyure) powdered in your food processor
- 2/3 C peanut flour
- 1-2 splashes MCT or canola oil
- 1/2 C sugar free chocolate chips
- 1/4 C sugar free butterscotch chips
Instructions
- Mix the first five ingredients together in a stand mixer using a paddle. A hand mixer or food processor works great, too.
- Scoop into balls and roll with your hands to make smooth.
- Melt the chocolate chips and butterscotch chips in the microwave (just pop into the same bowl) in 30 minute increments, stirring after each 30 seconds. Be very careful not to scorch the chocolate.
- Dip the peanut butter balls in melted chocolate mixture and place on a wax paper or parchment paper covered tray. Store in freezer until ready to eat.

Sounds very delicious especially since they are sugar free. Can you use anything else in place of peanut flour as I’ve never seen it in our area- Ohio?Thanks!
