This strawberry sauce is so delicious and so easy to make. Best of all, it’s sugar-free! At our house we eat it on waffles, ice cream, and cheesecake. I even love to stir in a bit of it to my morning oatmeal.
Lately, we’ve really enjoyed this strawberry sauce on sugar free angel food cake. It’s so light and lovely, and it will be perfect for our Easter table this year.
Sugar Free Strawberry Sauce
Ingredients
- 3 C strawberries fresh or frozen
- 2 T lemon juice
- 1/4 t xantham gun
- pinch of salt
- 3 T Gentle Sweet, Swerve, or Pyure Sweetener
Instructions
- Combine the berries, lemon juice, salt, and sweetener in a medium sauce pot on medium-low heat. Keep stirring while the berries heat up and release their juice. Use a potato masher or a sturdy whisk to smash up the berries.
- After the berries have released a good amount of their juice, whisk in the xanthan gum. Continue cooking on low, whisking occasionally until the sauce reaches your desired thickness.
- Remove from the heat and cool before adding to your storage container. Refrigerate or freeze for later.
