Last month my Mom hosted a lovely birthday lunch for me, it was such a fun day. A delicious menu with great company! One of the items on the birthday lunch menu was this Sugared Almond and Strawberry Salad. Since then it has easily become one of my favorites! The mix of sweet almonds, strawberries and mandarin oranges over a bed of spinach with a homemade dressing are the perfect combination. Check out the recipe below!
- ⅓ cup slivered or sliced almonds
- 3 Tbs Sugar
- 1 cup celery chopped
- 2 whole green onions chopped
- (1) 11 oz can mandarin oranges drained
- Strawberries
- Spinach (Or lettuce of choice)
- Dressing
- ½ tsp salt
- ⅛ tsp pepper
- ¼ cup extra virgin olive oil
- 1 Tbs parsley, chopped
- 2 Tbs vinegar
- ⅛ tsp hot sauce (Tabasco)
- Sautee almonds and sugar together on stovetop stirring constantly until sugar dissolves and almonds are coated. (watch and stir carefully as almonds burn easily)
- Cool and store in airtight container until use
- Combine 8 dressing ingredients (spices, oil, vinegar, tabasco) until mixed well and set aside
- Mix salad, oranges, strawberries, onion and celery together.
- Just before serving toss salad and dressing together and top with sugared almonds.
