Do You Love Brunch?
You already know this, I’m sure. Guys LOVE breakfast and brunch. They just do. Bacon, eggs, potatoes, waffles, fruit, syrup, coffee cake, toast. Well, you get the picture. It’s all pretty easy and familiar stuff–maybe that’s why they love it so much. The smell of the cooked meat–ham, bacon, sausage. The eggs are filling and can be made so many ways. Easy stuff! And to top it all off–the sweetness of the fruit, coffee cakes, pancakes and waffles drizzled with homemade maple syrup just can’t be beat. Plus, there’s just something about breakfast/brunch and the family gathering around the morning table that creates an indescribable, heart-rendering feeling that almost brings a tear to my eyes.
Father’s Day is Fast Approaching…..
Father’s Day is a couple weeks away and I’m starting to plan the brunch early. How about you? Are you having a Father’s Day Brunch or Breakfast? I’d love to hear what part of the day you are gathering and and what’s on your menu. It doesn’t really matter when or what, but that you honor your guy/guys. They quietly love it. They love to be respected and honored. Don’t you love to make them feel special? I do. I hope we all do. How they deserve it!
One Absolute on this year’s menu
One thing on my menu this year is Susie’s Hash brown Casserole. Our friend, Susie, brought over a delicious meal right after a major medical crisis in our family. Some days seemed a bit overwhelming. When our friends brought in meals for an entire week, we were amazed at their thoughtfulness and so thankful. Boy, did this help out! I told myself to NEVER FORGET the kindnesses shown to us during this dangerous and scary time, and to pass it on. I look around me to see who needs help; who feels overwhelmed. I am reminded once a gain to consider others before myself. Stretch out that helping hand and make a difference when someone is floundering.
Well here it is. I’m certain you will enjoy this amazing dish as much as we did. Will you, too, have it for Father’s Day?
Susie's Hash brown Casserole {for Father's Day}
Ingredients
- 1 24 oz. pkg frozen hash browns
- 1/3 C butter or margarine melted
- 1 t salt
- 1/2 t pepper
- 1 T onion flakes
- 1 can cream of chicken soup
- 1 C sour cream
- 2 C shredded cheddar cheese
- Topping:
- 2 C corn flakes crushed
- 2 T butter melted
Instructions
- Preheat oven to 350 degrees and grab a 9x13 casserole pan. In a large bowl, add all ingredients for casserole and give it a good stir.
- Topping:
- Sprinkle crushed corn flakes over top of casserole. Drizzle butter over top
