Father’s Day is coming right up and if your husband is anything like mine, he LOVES sweets. It only seemed fitting to whip up a batch of these cowboy cookies for my husband. He is, after all a bit of a cowboy. My husband use to rodeo back in the day and over the past few years those cowboy roots have returned and we’ve found ourselves the proud owner of a few horses.
My horse experience is very minimal. When I say minimal, I’m talking the extent of my experience goes back to my 1st grade best friends birthday party where we had a pony ride. So, as you can see this cowboy business is new to me. However, baking cookies is something I am familiar with.
These cookies are crispy in the outside and chewy in the inside, packed with flavor. Coconut, pecans, oats and chocolate chips with the added flavor depth of cinnamon make these a flavorful dessert.
Texas Cowboy Cookies
Ingredients
- 3 cups flour
- 1 Tbs baking powder
- 1 Tbs baking soda
- 1 Tbs ground cinnamon
- 1 tsp salt
- 1 1/2 cups unsalted butter room temperature
- 1 1/2 cups granulated sugar
- 1 1/2 cups packed brown sugar
- 3 eggs
- 1 Tbs vanilla extract
- 3 cups chocolate chips milk or semi sweet, personal preference
- 3 cups old fashioned rolled oats
- 2 cups sweetened flake coconut
- 1 cup chopped pecans optional
Instructions
- Heat oven to 350 degrees
- Mix flour, baking soda, baking powder, cinnamon and salt in a bowl and set aside
- In a large bowl or electric mixer beat butter until smooth and creamy. Slowly beat in sugars to combine.
- Add eggs one at a time while beating. Add in vanilla and mix well.
- Mix in flour mixture until just combined.
- Mix in chocolate chips, oats, coconuts and pecans
- Drop cookies in heaping tablespoons onto nonstick baking sheet or baking sheet lined with parchment paper.
- bake 8-10 minutes until edges slightly browned and still doughy in center.
- Remove and allow to cool on baking sheet apprx 3 minutes then transfer to a cooling rack.
