This recipe is inspired by a panini sandwich I once had years ago on a vacation. I still can taste that delicious sandwich…Yum! I put my own spin on it and now serve it as a warm open face sandwich or even an appetizer. It is packed full of flavor and is one of those recipes you can’t get enough of. Another bonus of this recipe is if you like things spicy you can add in more Sirarcha sauce for that added kick. If you like fresh cilantro, throw some more of it in too. The Siraracha and cilantro dress up this chicken salad and give it a Thai flavor.

- 1 loaf good French bread, sliced
- 1 large chicken breast, chopped finely
- ¾ cup of Mayonnaise
- 1 large tomato, diced
- 8 oz mild cheddar cheese
- ⅓ bunch of cilantro, chopped
- Siracha sauce to taste
- ¾ Tbs Sea Salt
- ¾ Tbs Paprika
- ¾ tsp ground pepper
- ¾ tsp garlic powder
- Preheat oven to 350 degrees
- Mix seasonings (salt, paprika, pepper and garlic powder) in separate bowl and set aside.
- Combine chicken and mayonnaise
- To taste add seasoning mixture above - begin with ½ tsp at a time, mix well
- Add chopped tomato and ½ chopped cilantro and cheddar cheese, stir to combine
- Add Siracha sauce to taste. (I mix a little in and then drizzle on top for added flavor)
- Spread mixture generously over sliced bread and bake uncovered on baking sheet at 350 degrees for approximately 8 minutes.
- Garnish with remaining cilantro and siracha sauce
