A few weeks back I posted a recipe for a delicious Greek Feta Dip that I had enjoyed while at a neighborhood block party with a friend of mine. At that same block party, I also had some of these tasty Tortellini Caprese Skewers. I just love going new places and trying new foods and there is no better way to do it than with family and friends.
These Tortellini Caprese Skewers are super easy to make. Thread some cooked Tortellini, cherry tomatoes and fresh mozzarella on a mini skewer and pour a basil pesto sauce over the top…and Voila! you have a simple to make and easy to serve finger food bursting with flavor. It’s great in the summertime with the fresh cherry tomatoes and later on in the year, around Christmas, you can make this extra festive with green spinach tortellini. Enjoy!
- 4 Tbs Extra Virgin Olive Oil
- 2 Tbs jarred basil pesto
- 2 Tsp red wine vinegar
- 2 packages tortellini (cooked according to package directions)
- 2 pints cherry tomatoes
- 12 ounces fresh mozzarella, cubed (or mozzarella pearls if available)
- In a small bowl mix together the olive oil, pesto and red wine vinegar. Set aside
- On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay skewers on a platter and lightly drizzle the dressing over them with a spoon.
- Serve immediatly or refrigerate until ready to serve
