Maxine, my mother-in-law, the best in the world, spent much of her time in the kitchen. She cooked a lot and we considered her a very good cook. Completely filled to the brim was her table top! Maxine was an avid reader and would comb through the magazines and newspapers to try new recipes. A farm wife submitted this particular one back in the early 70’s which became a staple on her table. And it sticks with us today. It’s so easy and so satisfying. Never has there been a leftover of our family tuna casserole. Over time I’ve tweeked it a little here and there to fit our likes. It’s one of those recipes where I always try to have the ingredients in the my pantry. If I don’t know what I’m fixing for supper, this one will always be a winner for last-minute crunch time. But the best part about this recipe is the thought of my mother-in-law, in her kitchen (which is now mine) cooking and baking away with her old pots and pans, always stirring up with her wooden spoons another delicious dish. I love her and will see her again, one day. My wonderful Maxine who impacted my life in so, so many ways. How I treasure the memories.
Tuna Macaroni Bake
Ingredients
- 2-3 C elbow macaroni, cooked and drained
- 1 can cream of mushroom soup
- 2-4 oz Velveeta cheese, chunked (amount to your liking)
- 2/3 can milk (use the soup can)
- 1/4 C chopped onion
- 1/8 C finely chopped green/red pepper (optional)
- 1 C peas (optional)
- 1 C day-old bread, cut in crouton-sized chunks
- salt and pepper to taste
- 1 can tuna
Instructions
- While cooking macaroni in a dutch oven or large pot, microwave these ingredients together in a separate bowl: soup, milk, cheese and onion for approximately 3-4 minutes or until cheese is completely melted. To the macaroni add cheese sauce, tuna, peas or peppers (optional) and cover the top with crouton-sized bread. Bake in 350 degree oven for 20 minutes.(I normally serve with a salad and hot Italian bread.
I have tasted and seen that the Lord is good.
