It’s officially summer break in our neck of the woods, here’s hoping my children will sleep in past 6am 😬. The month of May has been an absolute whirlwind, it has been packed full of obligations, activities and fun. It really has been quite a bit of a blur. Around here it’s easy to skip a healthy lunch for convenience foods when on the go. Well, quite frankly, I get a lot less resistance at the table with chicken nuggets. Ha! In an attempt to maintain some healthy foods while running from one place to the next, I occasionally make these Turkey, Avocado Toast “sandwiches”.
They are quick to make and offer plenty of nutrition. The whole wheat toast offers fiber, turkey gives you protein and the avocado adds healthy fats. They are tasty too! So when you are running from one place to the next and want a break from your chicken nuggets or macaroni and cheese, throw these together. You’ll be glad you did.
- 1 slice whole wheat bread
- 2 oz sliced turkey
- ½ Avocado
- Juice from 1 lemon wedge
- Dash of salt (more to taste if desired)
- Dash of red pepper flakes (more to taste if desired)
- Cracked pepper to taste
- Toast your whole wheat bread
- Mash your Avocado and add lemon juice, salt, red pepper flakes, mix well.
- Spread Avocado mixture on top of toast.
- Layer slices turkey
- Too with cracked pepper to desired liking.
