Welcome to June! It is my favorite month of summer. The anticipation of the having the entire summer lies before us – what a wonderful feeling! The list-making lady in me tells me to “start making a list” of all the fun things we want to do this summer. A few that come to mind are: go fishing, hit up the swimming pool, get ice cream, camp in a tent (or backyard, is good, too), visit a museum, catch fireflies, go biking, have a water balloon fight, visit a farmer’s market, make s’mores – just to name a few. Have you started yours? My kids love having this list as a physical reference. 🙂
Life on the farm is also busy this month. Hay cutting, raking, and baling keeps ’em going with the first hay cutting. Planting is done and it is sure exciting to watch the crops grow right before our eyes. With a husband on the go, I have made many lunches with a simple slice of meat and two slices of bread. Thankfully, he doesn’t seem to mind much, but I know if it were me, I would be getting tired of those cold cut sandwiches day in and day out. The other day, I went to make a sandwich and we were all out of bread. I decided to use a tortilla instead, and that has become the new norm around here. I make wraps for all of his farm lunches anymore. The tortilla makes it is easy to eat and may even fill him up more, too. 😉
The wraps are so easy to make, and just by adding a couple fresh vegetables, it can really enhance this somewhat basic sandwich. I use a fajita size tortilla – or bigger. Then I spread on a thin layer of mayonnaise (Ranch dressing would also be delish), then 1 slice of Havarti cheese, 3 slices of smoked turkey, 4 slices of cucumber, and 2 slices of Roma tomato. That’s it! Then just wrap it up slowly and tightly – keep the shape by covering in plastic wrap or foil. Refrigerate until ready to eat.
- 1 tortilla - fajita size or larger
- 2 T. mayonnaise (could also use Ranch dressing)
- 1 slice Havarti cheese
- 3 slices smoked turkey deli meat
- 4 slices cucumber
- 2 slices Roma tomato
- Starting with the tortilla, spread on mayonnaise. Then place Havarti cheese on top directly in the middle. Add 3 slices of smoked turkey. Layer with the cucumber then tomatoes.
- Wrap up starting by folding in the two sides, then roll the side closest to you. Use plastic wrap or foil to store. Keep refrigerated
