In these cold months of winter I usually crave a warm bowl of soup or a warm plate of pasta. I find both soup and pasta to be not only comforting dishes but also quite filling. This Tuscan Tortellini and Chicken soup fills both those cravings. A warm soup with yummy cheese tortellini included. This soup is full of delicious Italian flavors and the addition of the white beans brings in some added nutritional value as well. Serve it up with a nice salad and homemade bread and you have a restaurant quality meal at home. (I added links to my favorite Italian salad and bread below)
Pairs great with homemade bread and Italian Salad
- 2 Tbs butter
- 1 small white onion, diced
- 3 cloves garlic, minced
- 28 oz diced tomatoes
- 1 (15oz) can great northern beans, drained and rinsed
- 4 cups chicken broth
- ¼ cup grated parmesan cheese
- 1 Tbs Italian seasoning
- ¾ tsp salt
- ¼ tsp pepper
- 1 cup heavy cream
- 2 cups cooked and shredded chicken (rotisserie is great)
- 9 oz tortellini
- In large pot over medium heat, melt the butter. Add onion and garlic and sauté until tender and fragrant.
- Add diced tomatoes, beans, chicken broth, parmesan cheese, Italian seasoning, salt and pepper and heavy cream. Stir well and bring to a simmer.
- Add in diced chicken and tortellini continue to simmer additional 10-15 minutes until tortellini is cooked. Enjoy!
